Something I need to be very clear about: This is NOT just a boring chia seed pudding. I mean, yes, ok, it’s chia seeds and almond milk. So technically I guess it can be defined that way.
But this Dulce De Leche Chia Seed Parfait is 100% from its core a decadent, creamy dessert that screams everything good thing in life ever! Think more of a mousse texture with a creamy, sweet dulce de leche that’s legitimately out-of-this-world! I’m talking melt-in-your-mouth status, y’all. This stuff is SO GOOD.
What is Dulce De Leche?
If you’ve never had Dulce De Leche, it’s one of my absolute favorite flavors. It means candy or caramel in Spanish and it’s thick, sweet, sticky and so delicious. I basically grew up putting this stuff in everything! In this case, I used ready-to-go La Lechera Dulce De Leche.

Chia Seed Parfait Vs Traditional Parfait
A traditional French parfait is a cold dessert consisting of whipped cream, eggs and sugar. This chia seed parfait is a healthy version using chia seeds and almond milk to create a creamy, thick texture without any excess sugar or cream.
When chia seeds are added to liquid they develop a thick jelly-like outside coating making them a great option for making and thickening desserts, smoothies or breakfasts and they give this parfait the perfect consistency!
Oh and one more thing. The best thing (other than how amazing this recipe tastes). This recipe only takes about 10 minutes to put together! Annnnnd only 5 ingredients! Such a win.
Ingredients for Making Duche De Leche Chia Seed Parfait
- Chia seeds
- Duche De Leche
- Almond Milk
- Strawberries
- Granola
How to Make Chia Seed Parfait in 3 Easy Steps

Blend the chia seeds and cold almond milk until a mousse consistency is formed.

Serve into 4 – 6oz. servings and top with halved strawberries and granola.
Top Tips for Making Chia Seed Parfait
- You can top your parfait with any berries you like
- These parfaits will keep in the fridge for about 3 days, do not freeze
- You can sub Dulce De Leche with nut butter or maple syrup but the syrup will only add sweetness and not a thick texture
- You can use any nut milk for this coconut milk would also work
- Why not make them the night before and enjoy for breakfast, snack or dessert the next day

Ingredients
- 2/3 cups chia seeds
- 2 cups unsweetened almond milk
- 4 Tbsp La Lechera Dulce De Leche
- 1/2 cup strawberries (halved)
- 1/4 cup granola
Instructions
