It’s red and green and looks like healthy Christmas in a glass 😉 Perfect for a quick, energy filled breakfast before a day of cooking and getting ready for the holiday festivities, ya know?
We typically have our festivities on Christmas eve since my dad has always had to work. Every year when we were little kids, my sister and I would wait at the door until midnight when my dad would come from work. We would get SO excited when we saw him walking up to the door, and then he would come in and act like he had no idea that we were waiting for him and jokingly say things like “I’m tired. Lets just go to bed. We can open presents another day!”. We were always able to convince him to let us open presents that night, though. 😉

This Pomegranate Breakfast Parfait is vegetarian, gluten free, and delicious!
Not to mention the EASIEST ever to make! I’m really loving this for busy weekday breakfasts right now, but I can totally see this being an easy Christmas morning brunch addition! Maybe a make your own parfait bar?
For this recipe, I like to make my own Maple Apple Spice Gluten Free Granola or Homemade Granola(<—- soooooo good, BTW). Also, I love these pumpkin seeds and throw them into my breakfast parfaits all of the time. They’re the best!

Pomegranate Breakfast Parfait
Ingredients
- 1/2 cup plain greek yogurt
- 1/4 cup granola
- 1/4 cup pomegranate arils
- 2 Tbsp pumpkin seeds
Instructions
- In a glass, add a layer of each item.
- Serve and enjoy!
