Easy Strawberry Cheesecake Overnight Oats

These Strawberry Cheesecake Overnight Oats are creamy, perfectly sweet, and a healthy way to start the day! Made with rolled oats, cashew or almond butter, plant-based milk, Greek yogurt, and maple syrup, then topped off with gluten-free cracker crumbs and fresh or frozen strawberries, this recipe tastes just like cheesecake. Put these oats together in just 5 minutes or less for a wholesome breakfast the next day!

Ingredients

  • 1 cup rolled oats
  • 2 Tablespoons cashew butter or almond butter
  • 1 cup cashew milk or almond milk
  • 2-3 Tablespoons maple syrup or to taste
  • 1/2 cup greek yogurt
  • 5-6 medium fresh or frozen strawberries
  • 2 Tablespoons gluten-free graham cracker crumbs about 1 sheet, crumbled

Instructions

  • Divide the rolled oats, cashew butter, cashew milk, maple syrup, and greek yogurt into two mason jars.
  • Mix together and add freshly sliced strawberries (or frozen).
  • Add a lid to each mason jar and store them in the refrigerator overnight.
  • The next morning, divide the graham cracker crumbs and add to each mason jar. Enjoy!

Notes

    • You can store these oats in the fridge for up to 3-4 days.
    • Yes - you can freeze these oats! Although they won't have the same texture that they would when stored in the fridge, they're still delicious. Just wait to add the graham cracker crumbs right before enjoying!
    • You can actually use any fruit, all types of berries would work really well.
    • Want to add more protein? Feel free to add up to 2 Tablespoons of protein powder to each mason jar!
    • I love the graham cracker crumbs because they really make this recipe taste like cheesecake! But you can omit them or add in granola instead if desired.
    • Adjust the amount of maple syrup and graham cracker crumbs to sweeten to taste.
