Carrot Cake Overnight Oats
Overnight oats are one of my all-time favorite ways to start the day. I love that they can be prepped in just 5 minutes the night before, placed in a mason jar, and then they’re ready to go the next morning. Does it get any better than that?
I also love that they’re full healthy, nutritious ingredients! These Carrot Cake Overnight Oats are made with rolled oats, almond milk, Greek yogurt, a little bit of maple syrup, and the perfect blend of carrot cake spices, finely chopped carrots, shredded coconut, chopped walnuts and raisins (or not – your choice). This deliciously easy breakfast recipe is one you’ll want to keep on repeat!

Ingredients for This Recipe
Here’s what you’ll need to make these Carrot Cake Overnight Oats:
Rolled Oats – Rolled oats are the base for most overnight oats recipe.
Almond Milk – Any type of plant-based milk works great, but I love using vanilla almond milk.
Maple Syrup – Maple syrup, honey, agave syrup, or coconut sugar are all wonderful options for adding a touch of sweet.
Greek Yogurt – Any type of yogurt works great, but I love how Greek yogurt adds protein and a thicker, creamier texture. You can easily make this recipe dairy-free and vegan by using this Almond Milk Greek Yogurt instead!
Grated Carrots – I like to buy shredded carrots and then use a knife to finely chop them into small pieces. However, you can also just use a grater to make grated carrots!
Carrot Cake Spices – A mix of ground cinnamon and nutmeg bring out the carrot cake flavors. So yummy!
Unsweetened Coconut – I love adding unsweetened shredded coconut to these overnight oats. However, this is totally optional!
Walnuts – Chopped walnuts add healthy protein and fats. Feel free to substitute with any type of nut as needed.
Raisins – Are you team raisins, or no raisins? My husband HATES raisins, but I absolutely love them. So I’ve included them in the recipe, but they are optional depending on your taste! Other options include chopped dates (SO GOOD), dried cherries, or even dried cranberries.
Topping (Optional) – The creamy white chocolate topping is made from white chocolate chips (I like these for a refined sugar-free option), coconut oil, and Greek yogurt. Make it dairy free by using vegan white chocolate chips and plant-based Greek yogurt!
How to Make Carrot Cake Overnight Oats (VIDEO)
This recipe is actually SUPER easy to put together! You can even make a double batch and have them on hand for several days. Here’s how to make Carrot Cake Overnight Oats in 5 minutes or less:
- Mix the oats, spices, grated carrots, maple syrup, yogurt, and milk together (as well as coconut, walnuts, and raisins or dates) in two mason jars.
- Melt the white chocolate chips and coconut oil together, then slowly whisk in the yogurt.
- Add the topping over each overnight oats jar, then cover and store in the fridge overnight.
- That’s it! The overnight oats are ready to go in the morning.
Tips for Success
- You can always make a big batch of these oats in a large bowl and keep in the fridge for servings throughout the week.
- OR you can also make them in these pretty overnight oats jars that come with lids! You guys have been LOVING these in my Instagram reels.
- If you make the white chocolate yogurt topping, it’s really important to use thick Greek yogurt! Otherwise it comes out a bit runny.
- Another topping option is to just top with vanilla yogurt or add a few white chocolate chips.
- Adjust the amount of milk to your own desired taste and consistency if needed (keeping in mind that the oats will soak up a decent amount of the milk overnight).
How to Store Carrot Cake Overnight Oats
Overnight oats can be stored in the refrigerator for 2-3 days. They can also be frozen for up to 3 months! When you’re ready to eat them, simply thaw them out the night before or heat them up in the microwave.

The BEST Carrot Cake Overnight Oats
Ingredients
Overnight Oats
- 1 cup rolled oats
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup grated carrots (finely chopped)
- 2-3 Tablespoons maple syrup
- 1 1/2 cups vanilla almond milk
- 1/2 cup vanilla Greek yogurt
- 1-2 Tablespoons raisins or chopped dates (optional)
- 1-2 Tablespoons shredded unsweetened coconut
- 1-2 Tablespoons chopped walnuts
Topping (optional)
- 1 Tablespoons white chocolate chips
- 1/2 teaspoon coconut oil
- 1/4 cup vanilla Greek yogurt
Instructions
- Divide the overnight oats ingredients into two mason jars or bowls with airtight lids.
- Mix the ingredients in each mason jar until evenly distributed.
- Melt the white chocolate chips and coconut oil in the microwave, stirring every 30 seconds until smooth.
- Slowly add the yogurt into the white chocolate mixture, 1 Tablespoon at a time, stirring until smooth.
- Smooth the topping over each overnight oats jar and add extra shredded coconut, grated/chopped carrots, and chopped walnuts (if desired).
- Add the lids and store in the refrigerator overnight.
- Enjoy in the morning!

Excellent healthy recipe. It is the best…even though I made a few modifications (driven by shredding too much carrot). In the morning, this was a real treat. I can’t wait to have it the second morning too!
I went heavy on the carrots (2/3 cup or 2 carrots), pecans (1/4 cup) and raisins (1/4 cup). I used vanilla almond milk so I halved the maple syrup. Everything tasted really good so I put it in the frig. But then I noticed another overnight oats carrot cake recipe and added 1/2 t ground ginger (this was a good flavor idea) and 1 t orange zest (this was questionable addition but the citrus flavor did mellow out overnight). This morning I added fresh pineapple. We all know the best carrot cake in the world always has pineapple added! Delicious!
