If you’re like me and pretty much always have chocolate on your mind, these are perfect! Creamy, sweet, and soft on the inside, coated with a thick layer of decadent dark chocolate, topped with just a sprinkle of sea salt. I love them as a sweet treat after dinner, to take to parties, or give as a gift!
The Best Chocolate for Making Salted Caramel Truffles
For this recipe (which was SUPER easy to make, by the way), I used this dark chocolate as the coating. I love this chocolate because it’s dark, but still has a touch of sweet in it. Have you ever tried 100% dark? Haha. I have, and as much as I love very dark chocolate, it’s just not edible for me at 100%. This one is 74%, so it’s the perfect balance!
Personally, I always like to keep it on hand, because you never know when you’re going to get an overwhelming hankering for something sweet! Or if you’re like me, you might live in a state of continual chocolate cravings. In that case, just a few pieces of this stuff will help satisfy that sweet tooth!

How to Make a Healthy Salted Caramel Filling
What makes these salted caramel truffles healthy is by using natural sweet ingredients and leaving the refined sugars and nasty ingredients behind. It’s super easy to make and has a sweet, creamy, sticky, caramel taste that you’re gonna love!
Ingredients for making healthy salted caramel
- Dates – Sweet, sticky and delicious
- Honey – Naturally sweetens
- Almond flour – Helps bind everything together
- Vanilla – Adds a delicious sweet flavor
- Coconut Oil – Helps bring everything together
Method for Making Healthy Salted Caramel Truffles

In a small food processor, blend the ingredients for the filling.

Roll the filling into several small balls, about 10.

Place on wax paper and freeze.

Once the filling has hardened, remove from the freezer and set aside.

Melt the dark chocolate chips in a small bowl.

Coat each filling ball, making sure to coat all sides evenly.

Set each truffle on a baking sheet covered in wax paper, then add a few grains of sea salt on each one.
Top Tips for Making Healthy Salted Caramel Truffles
- Use the highest quality chocolate possible, I used 74% cacao which was the perfect balance
- Once hardened these truffles with keep for up to 1 week in the fridge or store them in the freezer for months
- When freezing the chocolate might discolor slightly but is still fine to eat
- Adapt the flavors by using different nut butter, or by using citrus juice/zest in the filling or melted chocolate

Healthy Salted Caramel Truffles
Ingredients
Filling:
- 10 dates
- 1/2 Tbsp honey
- 5 Tbsp almond flour
- 1/2 tsp vanilla
- 1/2 Tbsp coconut oil
Coating:
- 1/2 cup dark chocolate chips
- 1 tsp sea salt
Instructions
- In a small food processor, blend the ingredients for the filling.

- Once the filling has hardened, remove from the freezer and set aside.
- Melt the dark chocolate chips in a small bowl.
- Coat each filling ball, making sure to coat all sides evenly.
- Set each truffle on a baking sheet covered in wax paper, then add a few grains of sea salt on each one.
- Let cool until the shells are hard, then serve and enjoy!
