Healthy Tuna Noodle Casserole

Ingredients
- 2 Tablespoons olive oil
- 1 medium onion, diced
- 1 Tablespoon minced garlic
- 2 medium carrots, diced
- 8 ounces sliced mushrooms
- 3 Tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- 1 cup milk of choice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme (or 1 Tablespoon fresh)
- 1 1/2 cups peas (frozen or canned)
- 2 teaspoons Dijon mustard
- 1 cup cheddar cheese
- 12 ounces egg noodles (or pre-cooked pasta)
- 2 5-ounce cans tuna, drained
- 1/4 cup grated parmesan cheese
- 1/4 cup whole wheat breadcrumbs
- 1 cup steamed broccoli (optional)
- 2 cups chopped kale (optional)
Instructions
- Preheat the oven to 375 Fahrenheit.
- In a large pot or dutch oven, add the olive oil and diced onion.
- Saute for 5-7 minutes.
- Add in the carrots, garlic and mushrooms. Saute an additional 5-7 minutes.
- Whisk in the flour, then add in the broth, milk, salt, pepper, thyme, peas, dijon mustard and stir.
- Stir in the cheddar cheese until melted, then fold in the noodles and drained tuna. Stir to combine.
- Transfer to a 9×13 or similar sized baking dish.
- Whisk together the parmesan and breadcrumbs and sprinkle on top.
- Cover and bake for 25 minutes, then uncover and bake for an additional 5-10 minutes to let the top brown (or simply broil for 1-2 minutes, keeping a close eye so it doesn’t burn).
- Serve warm and enjoy!
