One-Pot Shrimp Scampi with Zucchini Noodles Recipe
Savory, herby shrimp smothered in a garlicky sauce with zucchini noodles, parmesan, and red pepper flakes. Does it get any better than that? When it comes to healthy, 30-minute weeknight meals, this recipe is ANYTHING but boring. The flavors are next level, and this entire dish can all be made in a cast iron skillet or pan. It’s been one of my favorites lately and I know you’re going to love this healthy shrimp scampi, too!

Ingredients
You only need a few simple ingredients for this easy shrimp recipe!
- Olive Oil – or butter, if desired.
- Diced Onion or Shallot
- Minced Garlic
- Raw Shrimp (thawed if previously frozen)
- Salt/Pepper
- Red Pepper Flakes
- Lemon Juice/Zest
- Chicken Broth – feel free to substitute some of the broth with a splash of white wine.
- Zucchini Noodles – store-bought or make your own!
- Fresh Parsley & Chives
- Parmesan Cheese – easily make this recipe dairy-free with this vegan parmesan!
How to Make Healthy Shrimp Scampi
This recipe is incredibly easy to make! Here’s how to make Healthy Shrimp Scampi with zucchini noodles:
- Saute chopped onion and minced garlic in a cast iron skillet with olive oil.
- Add in the shrimp and seasoning and cook for 3-4 minutes.
- Stir in broth, lemon zest, and lemon juice.
- Cook for another 2-3 minutes, then add in the zucchini noodles, fresh herbs, and parmesan!
Note: Feel free to cook the zucchini noodles a bit longer for a softer texture, or for less time if you want a crunchier texture!
How to Make Zucchini Noodles
If you’ve never had zucchini noodles (or zoodles) before, don’t worry. You can often find them at the grocery store or very easily make them yourself! If you’re making them, the only tool you’ll need is a handheld spiralizer (or a tabletop spiralizer). Simply cut the end off of one side of the zucchini, then place it on the spiralizer and twist. Continue to turn the zucchini until the entire thing is spiraled!

Healthy Shrimp Scampi w/ Zucchini Noodles
Equipment
Ingredients
- 2 Tablespoons olive oil
- 1/4 cup diced onion or shallot
- 2 Tablespoons minced garlic
- 1 pound raw shrimp (thaw if previously frozen)
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1 Tablespoon lemon zest
- 2 medium lemons, juiced (about 4 Tablespoons)
- 1/4 cup chicken broth
- 1 1/2 pounds zucchini noodles
- 1/4 cup fresh chopped parsley and chives
- 1/4 cup parmesan
Instructions
- Add the onion and olive oil to a large pan and saute for about 5 minutes.
- Add in the garlic and saute for about 1 additional minute.
- Add in the shrimp, salt, red pepper flakes, and black pepper.
- Saute for 3-4 minutes or until the shrimp begin to cook.
- Add in the chicken broth, lemon zest, and juice.
- Cook until the shrimp are completely cooked through, about 2-3 more minutes.
- Add in the zucchini noodles, parsley, chives, and parmesan, then toss to combine.
- You can cook down the zucchini to soften, or just saute it for a minute or so to retain some crunch.
- Serve with extra parmesan and enjoy!

I actually made this recipe, and it is absolutely DELICIOUS!!!! I made the recipe exactly as published then added a diced fresh tomato that needed to be used before it spoiled. My husband went back for seconds, which is a rarity. After eating, he confessed he was not super excited about the spiralized zucchini noodles but was happy to be wrong, they were delicious. My 13-year-old son requested it be put in the weekly rotation. This is one of those rare healthy versions where you do not miss the original. My one other note is in regard to the chicken broth. I use Better Than Bouillon and tend to make it a little stronger than the directions call for. This makes for a little more depth of flavor.
