The holidays are here and it’s the season of cozy meals, holiday parties, and family gatherings. Today, I’m sharing one of my all-time favorite side dish recipes: Roasted Brussels Sprouts With Goat Cheese & Cranberries! I’ve made and taken this side dish to countless parties, and it’s always one of the most talked about dishes. Here’s some of the feedback I’ve received:

People LOVE this recipe (including myself, of course!) and you would never guess how incredibly i easy it is to make. It’s by far my most requested recipe for gatherings every year! If you need an easy side dish recipe, this is the only Roasted Brussels Sprouts recipe you’ll ever need. It’s SO good!

Ingredients
You’ll only need a few simple ingredients to make these Roasted Brussels Sprouts with Goat Cheese!
Brussels Sprouts – I love using fresh Brussels sprouts for this recipe! Simply remove them stems and cut them into halves or quarters first for best results. Personally, I like to leave the outer leaves on each sprout. They make for deliciously crunchy and flavorful pieces at the end!
Butter (trust me on this one!) – You can use a cooking oil, like olive oil or avocado oil, if you like. But there’s nothing like the flavor of melted butter on roasted Brussels sprouts, so I highly recommend it if you can!
Garlic Powder/Salt/Pepper – Garlic powder, salt, and pepper add delicious flavor.
Crumbed Goat Cheese – The crumbled goat cheese at the end of this recipe is NEXT LEVEL! So good. If you’re not a fan of goat cheese, you could always use crumbled feta or grated parmesan cheese instead.
Dried Cranberries – The dried cranberries in this recipe add just the right touch of sweet!
Chopped Walnuts – Don’t skip out on the chopped walnuts! They add a crunchy texture that tops off these Roasted Brussels Sprouts to perfection.
TIP: Want to take these up a notch even more? You can always add a little drizzle of balsamic vinegar and/or honey before roasting for a touch of extra flavor!

How to Make Roasted Brussels Sprouts
Making this Roasted Brussels Sprouts recipe doesn’t get any easier: throw them in a casserole dish (or rimmed baking sheet/pan), add butter and seasoning, roast at 400 degrees F (tossing them halfway), and add your favorite toppings. Here’s how to make Roasted Brussels Sprouts with Goat Cheese:
- Cut the Brussels Sprouts into halves (or quarters), then place in a casserole dish.
- Top with slices of butter and bake for about 15 minutes.
- Remove from the oven and add garlic powder, salt, and pepper.
- Toss to evenly coat the Brussels sprouts.
- Roast for another 20-25 minutes.
- Let cool and sprinkle crumbled goat cheese, cranberries, and walnuts over everything!
That’s it! A super flavorful and impressive side dish recipe that’s also healthy and very low effort. This is my kind of recipe!
PRO TIP: You can serve this side dish warm or at room temperature. Of course, warm is better! If you’re making these a few hours before a party or gathering, you can use an insulated casserole dish carrier (like this one) to keep them warm until you’re ready to serve!
How to Cut Brussels Sprouts
It’s best to cut the brussels sprouts into even pieces. This means that some may be cut into halves, while others (larger ones) can be cut into quarters!
How Long to Roast Brussels Sprouts at 400 Degrees?
For perfectly roasted brussels sprouts, roast them in the oven for about 35-40 minutes at 400 degrees F. Be sure to toss them halfway through the roasting process to keep them from burning!
How to Know When Brussels Sprouts Are Done Roasting?
Perfectly roasted Brussels sprouts should be tender on the inside and crispy on the outside! To check if they’re done, press into one with a fork. If the fork easily goes into the brussels sprout, they are ready! If not, they need a bit more time.
Can You Roast Frozen Brussels Sprouts?
Yes! However, the cooking time will be different for frozen Brussels sprouts vs. fresh. Check the Brussels sprouts often and turn throughout the process to make sure they cook evenly!

OH. Let me tell you about it. There is nothing (and I mean NOTHING) like the incredible flavor pairings of buttery roasted Brussels sprouts, creamy goat cheese, sweet dried cranberries, and crunchy chopped walnuts. The flavors just work together so well to create a perfect masterpiece! It’s SO good!
Refrigerating/Freezing Roasted Brussels Sprouts
Roasted Brussels Sprouts leftovers can be refrigerated for 3-5 days in an airtight container, then moved to the freezer for up to 3 months! To reheat, place them in the microwave or back in the oven.

- 1 1/4 pound brussels sprouts, halved or quartered
- 1/4 cup butter (or oil)
- 2 teaspoons garlic powder
- salt/pepper (to taste)
- 1/3 cup crumbled goat cheese
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
Instructions
- Preheat oven to 400 degrees F.
- Cut each of the brussels sprouts into halves or quarters and remove the ends.

How can one ever go wrong with Brussels sprouts? I have the same thing with my family and friends – “I only like them the way you make them.” Oddly, I make them roasted with cranberries and walnuts too, but instead of goat cheese, I use crumbled feta.
