Cilantro Lime  Rice Bowls

Gather your ingredients.

Heat oil in a pot or Dutch oven and toast the rice until it turns a light brown color.

Stir in the garlic, water (or broth), lime zest, and salt to the pot and bring it to a boil.

Reduce the heat, cover and let it simmer for 7-8 minutes while occasionally stirring to prevent sticking.

Add lime juice to the rice and cook for another 2-3 minutes. Add in some fresh cilantro. Fluff the rice and mix everything together.

Assemble the bowls and drizzle with cilantro lime sauce. Serve & enjoy!
