Gingerbread Cookie Overnight Oats

Gather your ingredients.

Divide and mix oats, plant-based milk, yogurt, almond butter, maple syrup, a little bit of molasses, and gingerbread spices together in mason jars.

For the topping, melt the white chocolate chips and coconut oil together, whisking until smooth.

Slowly whisk in the yogurt, 1 Tablespoon at a time, and smooth evenly on top of the oats.

Add lids and place in the fridge overnight! Enjoy in the morning!
