Gluten-Free Pumpkin Chocolate Chip Cookies

Mix softened butter, brown sugar, and granulated sugar together in a large mixing bowl. Add in pumpkin and vanilla and beat until smooth.

Add the gluten-free flour, baking soda, pumpkin spice, and salt.

Mix until the pumpkin cookie dough is combined, then fold in the chocolate chips.

Scoop on to a baking sheet, then bake.

Let cool on a wire rack and enjoy!
