Kale & Brussels Sprouts Curry Quinoa Salad

Cook the curry quinoa.

Combine Brussels sprouts with oil and salt/pepper on a baking sheet.

Lightly roast the sprouts.

Add the pomegranate seeds, dried cranberries, and almonds to the quinoa.

Mix the dressing and salad ingredients, toss and enjoy!
