Easy Lemon Garlic Shrimp & Quinoa

Ingredients

  • 16 oz. medium shrimp cooked, deveined, tails-off
  • 2 Tbsp avocado oil or any cooking oil
  • 2 tsp minced garlic
  • 1/2 tsp paprika
  • 1/2 lemon juiced
  • salt/pepper to taste
  • 1 cup quinoa cooked
  • fresh parsley optional

Instructions

  • Heat up the oil and garlic over medium heat.
  • Add in the shrimp, paprika, lemon juice, salt, and pepper.
  • Sauté for about 7-10 minutes, or until everything is warm.
  • Serve over cooked quinoa with fresh parsley (optional) and enjoy!

Notes

  • If using frozen shrimp, fully thaw them in advance.
  • This recipe calls for cooked shrimp. However, feel free to use uncooked shrimp instead! Simply add in a little bit of extra time for cooking the shrimp.
  • Feel free to use precooked quinoa to save time!
  • This recipe does great as leftovers and can be eaten hot or cold for lunch or dinner the next day.
