Ingredients

  • 1/2 cup quinoa
  • 4 cherry plums
  • 2 cups arugula/spinach mix
  • 2 Tbsp goat cheese
  • 1 cup grape tomatoes
  • 2 Tbsp pine nuts

Instructions

  • Cook the quinoa according to directions.
  • While the quinoa is cooking, slice the cherry plums and grape tomatoes into halves. Chop the lettuce (optional) and combine all of the ingredients.
  • Add the quinoa.
  • Serve and enjoy!
