These Greek Chicken Kabobs with Tzatziki Sauce are savory, flavorful, and a delicious summer dinner idea! Made with chicken, bell peppers, red onions, and zesty lemon, these kabobs are a healthy dinner dream come true. Whisk together the lemon, vinegar, olive oil, garlic, mustard, honey, oregano, salt and pepper.
Add the cubed chicken to a bowl and pour the sauce on top.
Marinate for at least 30 minutes, ideally 1-2 hours.
While the chicken marinates, soak the skewers in water.
Whisk together all ingredients for the tzatziki and set aside in the fridge.
Drizzle the bell peppers and red onion with olive oil.
Thread a bell pepper, onion, and two pieces of chicken on a skewer and repeat.
Grill for about 8-12 minutes, heat a pan with olive oil and pan fry for 3-4 minutes on each side, or roast in the oven at 425 degrees F for 20-25 minutes, rotating the skewers halfway through.
