Greek Chicken Kabobs w/ Tzatziki Sauce

These Greek Chicken Kabobs with Tzatziki Sauce are savory, flavorful, and a delicious summer dinner idea! Ingredients

Greek Chicken Kabobs

  • 1 medium lemon, juiced
  • 1 teaspoon lemon zest
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons olive oil
  • 1 Tablespoon minced garlic
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey 
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound chicken breast, cut into cubes 
  • 3 medium bell peppers, cut into chunks
  • 1 medium red onion, cut into chunks

Tzatziki Sauce

  • 1/2 cup plain greek yogurt
  • 1/2 cup grated cucumber
  • 1 Tablespoon lemon juice
  • 1 Tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 Tablespoon fresh dill
  • 1 Tablespoon fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Whisk together the lemon, vinegar, olive oil, garlic, mustard, honey, oregano, salt and pepper. 
  • Add the cubed chicken to a bowl and pour the sauce on top. 
  • Marinate for at least 30 minutes, ideally 1-2 hours.
  • While the chicken marinates, soak the skewers in water.
  • Whisk together all ingredients for the tzatziki and set aside in the fridge.
  • Drizzle the bell peppers and red onion with olive oil.
  • Thread a bell pepper, onion, and two pieces of chicken on a skewer and repeat. 
  • Grill for about 8-12 minutes, heat a pan with olive oil and pan fry for 3-4 minutes on each side, or roast in the oven at 425 degrees F for 20-25 minutes, rotating the skewers halfway through.
  • Serve with fresh parsley and the tzatziki sauce.
