4 pieces naan bread or 1 batch Vegan Pizza Dough 3/4 cup spinach pesto 3/4 cup mozzarella shredded 1 cup mushrooms thinly sliced 1/2 Tbsp olive oil 1 cup grape tomatoes halved 1/2 cup goat cheese crumbled salt/pepper to taste 1/2 cup basil optional, for garnish
Preheat oven to 350 degrees F.
Top each piece of naan bread with the spinach pesto.
Add a layer of mozzarella and mushrooms.
Drizzle the olive oil over the pizzas, focusing on the mushrooms.
Add sliced tomatoes, goat cheese crumbles, and salt/pepper to taste.
Bake for about 20-25 minutes (or until the mushrooms are fully cooked).
Top with fresh basil (optional), serve, and enjoy!
To store these pizzas:
