Slow Cooker Spinach Artichoke Dip

Ingredients

  • 1 cup cauliflower 1/3 head
  • 2/3 cup unsweetened almond milk
  • 1 small can artichoke hearts
  • 2 cups spinach
  • 1/2 cup mozzarella
  • 2 tsp crushed garlic
  • 1 tsp pepper

Instructions

  • In a microwave steamer, lightly steam the cauliflower for about 3 minutes.
  • Blend the steamed cauliflower and almond milk until a puree texture is created.
  • Pour the puree, artichoke hearts, spinach, mozzarella, and garlic in the slow cooker.
  • Cook on high for 1 hour, stirring it after every 20 minutes.
  • Top with pepper and serve!
