Slow Cooker Spinach Artichoke Dip
- 1 cup cauliflower 1/3 head
- 2/3 cup unsweetened almond milk
- 1 small can artichoke hearts
- 2 cups spinach
- 1/2 cup mozzarella
- 2 tsp crushed garlic
- 1 tsp pepper
In a microwave steamer, lightly steam the cauliflower for about 3 minutes.
Blend the steamed cauliflower and almond milk until a puree texture is created.
Pour the puree, artichoke hearts, spinach, mozzarella, and garlic in the slow cooker.
Cook on high for 1 hour, stirring it after every 20 minutes.
Top with pepper and serve!
