Strawberry Chocolate Brownies

Strawberry Chocolate Brownies that are gluten-free, refined sugar-free, and made with wholesome ingredients in just one bowl! Made with a fudgy chocolate almond butter brownie layer, diced strawberries mixed in, and topped with more strawberries and chocolate, these healthy brownies are SO good. Every bite is full of indulgent, chocolatey goodness and balanced by fresh, sweet strawberries!

Ingredients

  • 1/2 cup oil or melted butter
  • 1/3 cup almond butter
  • 3/4 cup coconut sugar
  • 1/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3/4 cup oat flour
  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup finely diced strawberries
  • 1/3 cup fresh strawberries sliced

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Line an 8x8" baking pan with parchment paper and set aside.
  • Whisk together all wet ingredients until smooth in a large bowl.
  • Whisk in the dry ingredients, aside from the chocolate chips.
  • Fold in the chocolate chips and the diced strawberries.
  • Transfer to the prepared pan and smooth out the top.
  • Top with the sliced strawberries and additional chocolate chips if desired.
  • Bake for 30-38 minutes or until a toothpick comes out clean.
  • Let cool in the pan for 20 minutes, then transfer to a wire rack to finish cooling.
  • Slice into 16 squares and enjoy!

Store these Strawberry Brownies in the refrigerator for 3-5 days in an airtight container. You can also freeze them for up to 3 months! To enjoy, simply thaw them in the fridge the night before, then pop them in the microwave for a few seconds to warm them up.
