Strawberry Cheesecake No-Bake Energy Bites
Strawberry Cheesecake No-Bake Energy Bites that are loaded with protein, creamy cashew butter, sweet strawberries, and so many good things. These are perfect as a snack or a healthy dessert! (Vegan, Gluten-Free, Dairy-Free, Refined Sugar Free)

- 1 cup rolled oats
- 2/3 cup vegan protein powder
- 1/2 cup cashew butter
- 1/4 cup coconut oil
- 3 Tbsp agave
- 1/4 cup powdered freeze dried strawberries
- 1/2 tsp strawberry extract (optional)
Toppings (choose one or all!)
- 2 Tbsp coconut shavings (optional)
- 2 Tbsp crushed graham crackers (optional)
- 1/4 cup coconut yogurt (optional)
Blend the rolled oats into a powder.
In a mixing bowl, mix the rolled oats with the protein powder, cashew butter, coconut oil, agave, powdered freeze dried strawberries, and optional strawberry extract.
Once everything is thoroughly mixed, place in the refrigerator for 5 minutes.
Remove the refrigerated "dough" and roll into about 2" sized balls.
Roll each energy bite in the desired topping, place in a container, and refrigerate until you are ready to serve.
