Greek Yogurt Pancakes Recipe

These fluffy and healthy Greek Yogurt Pancakes are the BEST! Made with oat or whole wheat flour, vanilla greek yogurt, eggs, and almond milk, this recipe is a great way to start the day. Make a big batch of these pancakes for quick and easy breakfasts all week long!

Ingredients

  • 1/2 cup oat flour or whole wheat flour
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup Two Good Vanilla Greek Lowfat Yogurt
  • 2 large eggs
  • 1 cup almondmilk

Instructions

  • Mix the dry ingredients together.
  • In a separate bowl, whisk the yogurt, eggs, and milk together until smooth.
  • Pour the liquid ingredients into the dry ingredients and mix together, making sure not to over mix and keeping lumps in the batter.
  • Pour about 1/4 cup of the batter into a griddle or pan and cook the pancakes for about 2-3 minutes on each side.
  • Serve and enjoy!

Notes

  • Don't over-mix pancakes! Keep lumps in the batter to ensure that the pancakes are fluffy (instead of chewy).
  • Save time and energy by using a griddle or large pan to make multiple pancakes at a time.
  • Feel free to sub almondmilk with any type of milk!
