Ingredients

  • 1 cup leftover pie dough or however much you have
  • 2 Tablespoons butter, melted or vegan butter
  • 2-4 Tablespoons brown sugar
  • 2 teaspoons cinnamon

Instructions

  • Preheat oven to 350 degrees F.
  • Roll out the leftover pie dough to create a flat disk.
  • Use cookie cutters to cut out cookie shapes.
  • Brush the melted butter over each cookie.
  • Top each cookie with a sprinkle of brown sugar and cinnamon (to taste).
  • Bake the pie cookies for about 10-15 minutes, or until the edges begin to lightly brown.
  • Let cool, serve, and enjoy!

Notes
