Mix the protein powder, oat flour, cashew butter, honey, and maple syrup together in a bowl.
Roll into 12 balls (about 1" to 1 1/2" in size) and place them on a small baking sheet (or plate) lined with parchment paper.
Melt the white chocolate chips, 15 seconds at a time, until fully melted.
Drizzle the white chocolate over each cake bite.
Immediately add sprinkles to each ball.
Place them in the refrigerator for about 5-10 minutes, then enjoy!
To store, keep these cake energy balls in an airtight container at room temp for 3-5 days or in the refrigerator (recommended) for up to 2 weeks!
You don't have to melt the white chocolate if you don't want to! Feel free to just mix in the white chocolate chips and sprinkles if that's easier.
