- 6 pitted dates
- 1/2 cup cashew butter
- 1/4 cup chia seeds
- 1 tsp coconut oil
- 2 Tbsp matcha powder
- 1/4 cup finely shredded coconut
Blend the dates until they form a paste.
Add the cashew butter, chia seeds, coconut oil, and 1 Tbsp of matcha powder. Continue to blend until even.
Create each bite by rolling the "batter" by hand. If the batter is too soft to roll, refrigerate for 1 hour before creating bites.
Roll each Matcha Chia Seed Energy Bite in the matcha powder and shredded coconut. Serve and enjoy!
