Sweet, hearty, wholesome, and packing a big crunch, these Matcha Chia Seed Energy Bites are full of flavor and just the lift you need for a bit of anytime energy! They are vegan, vegetarian, gluten and dairy-free, and can be whipped up in just 5 minutes (but stored for weeks)!

  • Mix the rolled oats, chia seeds, cashew butter, agave syrup, matcha powder, and vanilla protein powder together until smooth.
  • Roll each energy bite into a ball by hand.
  • Roll each ball in the shredded coconut until evenly coated.
  • Refrigerate for 10-15 minutes and enjoy!

Notes

  • Use a quality Matcha Powder, like Vital Proteins Matcha Collagen!
  • Place the energy bite dough in the refrigerator before rolling for about 10 minutes to make it easier to roll.
