  • 1 cup arugula/spinach mix
  • 1/4 cup sun-dried tomatoes
  • 4-5 grape tomatoes
  • 1 Tbsp goat cheese optional, or vegan cheese crumbles
  • drizzle Vegan Turmeric Ginger Dressing optional

Instructions

  • Cook the lentils according to directions.
  • Top the arugula/spinach mix with sun-dried tomatoes, grape tomatoes, goat cheese, and dressing.
