Pancakes
- 1/2 cup creamy almond butter
- 3 large eggs
- 1/3 cup vanilla protein powder
- 1/2 cup rolled oats
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 Tablespoon maple syrup
Topping
- 1/4 cup real maple syrup
- 1/4 cup dark chocolate chips
- 1/4 cup mini marshmallows
Blend all of the pancake ingredients in a blender until smooth.
Spray a non-stick skillet with coconut oil and set over medium heat.
Cook the pancakes on each side for about 1-2 minutes or until bubbles start to form on the top.
Repeat until all batter has been used. It will thicken as it sits, so add more milk as needed, but thicker batter yields fluffier pancakes.
Melt the dark chocolate chips in a glass container. Add the maple syrup, then pour the mixture over the pancakes and top with marshmallows.
Serve and enjoy!
- Remember to grease the skillet or frying pan with a cooking spray before frying the pancakes
- Once the pancakes are cooked you can let them cool and store them in an airtight container for 1-2 days
- Try to use good quality chocolate for this recipe, dark chocolate would work best but you could use your favorite
- Try placing the pancakes under the broiler for a couple minutes to melt the marshmallows!
