Gingerbread French Toast
This Gingerbread French Toast is SO perfect for these cold winter months! Choose any type of bread you want - brioche, whole wheat, gluten-free, and top it off with powdered sugar, cranberries, pomegranate arils, maple syrup, or chopped nuts. This breakfast recipe is one of my holiday favorites and can easily be made dairy-free and gluten-free!

1/2 cup plant-based milk 2 large eggs 1 Tablespoon maple syrup 1 Tablespoon molasses 1 teaspoon vanilla extract 1/4 teaspoon salt 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon cloves 1/2 teaspoon ginger 1 Tablespoon butter or coconut oil 6 slices bread brioche, whole wheat, gluten-free - your choice!
In a shallow bowl, whisk together the milk, eggs, maple syrup, molasses, vanilla, salt, and spices.
Heat a non-stick skillet with the butter or coconut oil.
Dip the bread in the egg mixture, making sure to coat each side evenly.
Cook in the skillet over medium heat on each side until lightly browned.
Serve with fresh berries, cranberries, powdered sugar, maple syrup, and/or chopped nuts.

You can also replaces the spices with 1 to 1 1/2 teaspoons of Gingerbread Spice!
Make this recipe dairy-free by using plant-based milk and coconut oil, make it gluten-free with gluten-free brioche or challah.
