  • 2 cups dry lentils
  • 6 cups vegetable broth
  • 1 large carrot chopped
  • 1 medium zucchini chopped
  • 15 oz. can diced tomatoes
  • 2 tsp cumin
  • 1 Tbsp onion flakes
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • salt to taste
  • pepper to taste


  • In a large saucepan or stock pot, bring the vegetable stock to a boil and add the lentils, chopped carrot, and chopped zucchini.
  • Reduce to a simmer and add in the diced tomatoes, cumin, onion flakes, garlic powder, dried oregano, salt, and pepper.
  • Cook for about 40-45 minutes.
  • Serve and enjoy or freeze for later!
