Ingredients

Healthy Banana Bread

  • 3 ripe bananas about 1 1/4 cups pureed
  • 1/4 cup coconut oil room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 1 1/2 cups gluten-free flour or whole wheat flour
  • 1/4 cup rolled oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Oat Sugar Streusel (Optional)

  • 1/4 cup rolled oats
  • 2 Tablespoons coconut oil
  • 2 Tablespoons brown sugar

Instructions

  • Preheat the oven to 350 degrees F.
  • Blend the bananas in a food processor or blender until they become a puree.
  • Add in the coconut oil and blend until smooth.
  • Add in the eggs, vanilla, and maple syrup and blend until smooth.
  • In a separate bowl, mix the flour, oats, baking soda, and salt.
  • Pour the dry mixture into the food processor and lightly blend until just well combined.
  • Pour the batter into a 9"x5" loaf pan lined with parchment paper.
  • Mix the streusel ingredients together and sprinkle over the batter.
  • Bake for 40-45 minutes, or until a toothpick comes out clean.
  • Serve and enjoy!

Notes

  • Nutrition does not include the optional streusel. The streusel adds about another 30 calories per slice!
