Jackfruit Pulled Pork Tacos - the EASIEST vegetarian tacos ever! "Pulled pork" made with shredded jackfruit, the best seasoning, and barbecue sauce, filling warm corn tortillas and topped off with cilantro, red onion, cotija cheese (or a vegan cheese alternative), and avocado. These jackfruit tacos are full of summertime vibes and can be made in just 30 minutes!

Jackfruit "Pulled Pork" 2 14 ounce can jackfruit drained 1 teaspoon chili powder 1/2 teaspoon smoked paprika 1/2 teaspoon coriander 1/4 teaspoon cayenne optional 1/2 teaspoon salt 1/2 teaspoon pepper 1 Tablespoon avocado oil 1/2 medium onion, chopped 1 teaspoon minced garlic 1/2 cup barbecue sauce 1/4 cup tomato sauce 2 Tablespoons apple cider vinegar Jackfruit Tacos 8 medium corn tortillas 1 cup fresh cilantro leaves 1/2 medium red onion, thinly sliced 1/2 cup cotija cheese or crumbled feta 1 medium avocado, sliced optional
Drain and shred the jackfruit in a large bowl, using two forks to separate the pieces.
In a separate bowl, mix the chili powder, smoked paprika, coriander, cayenne (optional), salt, and pepper.
Heat up the avocado oil in a large sauté pan or skillet over medium-high heat.
Add the chopped onion and garlic, cooking for 2-3 minutes.
Mix in the shredded jackfruit and mixed spices.
Cook for about 4-5 minutes, mixing often.
In a separate bowl, mix the barbecue sauce, tomato sauce, and apple cider vinegar together.
Pour the sauce into the pan and mix with the jackfruit, coating evenly.
Cook for about 4-5 minutes, or until the sauce begins to slightly reduce and thicken.
On a separate burner, heat up the tortillas.
Fill each tortilla with the cooked "pulled pork" jackfruit and top with fresh cilantro, sliced red onions, cotija cheese, and avocado slices.
Serve and enjoy!
