The BEST Sweet Potato Brownies! This one-bowl recipe is easy to make and perfect for a healthier version of classic brownies. Made with sweet potato puree, brown sugar, butter (vegan options available), and real baking chocolate, these fudgy brownies are SO good. Add in optional spices for the ultimate fall dessert!

Ingredients

  • 1/2 cup whole wheat flour or all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 4 ounces baking chocolate or 1/2 cup chocolate chips
  • 1/3 cup sweet potato puree
  • 1 teaspoon cinnamon optional
  • 1/4 teaspoon cloves optional
  • 1/4 teaspoon nutmeg optional

Instructions

  • Preheat oven to 350 degrees F.
  • Whisk the liquid ingredients together in a large mixing bowl.
  • Add in the dry ingredients, then mix until fairly smooth.
  • Pour the batter into an 8x8" baking pan lined with parchment paper.
  • Bake for 25-30 minutes.
  • Let cool for about 5 minutes, slice into brownies, and enjoy!

Notes

  • This recipe makes 12 large brownies or 16 medium-sized brownies.
  • These Sweet Potato Brownies lean towards a fudge brownie texture. However, you can easily turn them into cakey brownies by adding 1/2 teaspoon of baking powder!
  • Top the brownie batter with anything you want. Nuts, white chocolate chips, or drizzled almond butter are all delicious toppings!
  • Store these healthy brownies at room temperature in an airtight container for 2-3 days or in the refrigerator for 4-5 days.
