Gingerbread Cookie Overnight Oats

- 1 cup rolled oats
- 1.5 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp clove
- 1/4 tsp ground ginger
- 2 packets stevia
- 2 Tbsp maple syrup
- 1 cup unsweetened almond milk
- Overnight oats don't keep well for more than a day (the texture will change) so if you want to prep ahead make a big batch of the dry ingredients and add the liquid only the night before you need them.
- The longer you leave the oats the softer they will become, 8 hours is ideal but you could leave them for 4-6 hours.
- You can easily adapt this recipe with your favorite spices and natural sweeteners such as honey or applesauce.
