Gingerbread Cookie Overnight Oats

These Gingerbread Cookie Overnight Oats are creamy, dreamy, sweet, and festive. And they're one of the EASIEST healthy breakfasts of all time! Just mix a few simple ingredients in mason jars, add the creamy topping, and refrigerate. These healthy oats are perfect for the busy holiday season!

Ingredients

  • 1 cup rolled oats
  • 3/4 cup almond milk
  • 1/2 cup vanilla Greek yogurt or dairy-free yogurt
  • 1/4 cup almond butter
  • 2-3 Tablespoons maple syrup
  • 2 teaspoons molasses optional
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon allspice

Topping (Optional)

  • 1 Tablespoons white chocolate chips
  • 1/2 teaspoon coconut oil
  • 1/4 cup vanilla Greek yogurt or dairy-free yogurt
  • 1 teaspoon cinnamon

Instructions

  • Divide the overnight oats ingredients into jars and mix (or combine in a large bowl and divide into containers).
  • Melt the white chocolate chips and coconut oil in the microwave, stirring every 30 seconds until smooth.
  • Slowly add the yogurt into the white chocolate mixture, 1 Tablespoon at a time, stirring or whisking until smooth.
  • Smooth the topping into each of the containers and sprinkle with cinnamon.
  • Add lids and store in the fridge overnight. Enjoy in the morning!
