Vegan Chipotle Chickpea Tacos
Gather your ingredients.
Cook the onions in avocado oil or olive oil over medium heat until soft. Add in the chickpeas and chipotle spices.
Pour in the garlic, tomato sauce, and apple cider vinegar mixture. Mix and cook for just a few minutes as the sauce thickens.
Heat up the tortillas and fill with chipotle chickpeas and toppings.
