Ingredients

  • 1 1/2 Tbsp Coconut Oil
  • 2 Tbsp Chopped Yellow Onion
  • 2 Cups Black Beans
  • 1 1/4 Cups Cooked Quinoa
  • 1 Sliced Bell Pepper
  • 2 tsp Crushed Red Pepper
  • Salt/Pepper
  • 2 Tbsp Crumbled Queso Fresco

Instructions

  • Heat up the coconut oil in a skillet. Add in yellow onions, then slightly fry.
  • Add in black beans and quinoa. Cook for about 10 minutes.
  • Add in the bell pepper slices, crushed red pepper, salt and pepper. Cook for about 5 more minutes.
  • Serve and top with crumbled queso fresco!
