Ingredients

  • 1 1/2 cups all-purpose flour spooned and leveled
  • 2 teaspoons baking powder
  • 2 1/2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 3/4 cup packed light brown sugar
  • 3/4 cup 4% cottage cheese I used the Good Culture 4% Organic version
  • 1 Tablespoon vanilla extract
  • 2 large eggs
  • 1/4 cup unsalted butter
  • 1/2 cup apple cider

Garnish

  • 1 Tablespoon unsalted butter melted
  • 2 Tablespoons cane sugar
  • 1 1/2 teaspoons cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon allspice

Instructions

  • Preheat the oven to 350°F. Line a 8”x4” loaf pan with parchment paper and grease with cooking spray. Set aside.
  • To make the cake, in a large mixing bowl whisk the all purpose flour, baking powder, cinnamon, nutmeg, salt and brown sugar.
  • In a high speed blender, combine the cottage cheese and vanilla. Blend 30-60 seconds or until smooth.
  • Pour the blended mixture over the dry ingredients and add the eggs, oil and apple cider.
  • Whisk until a smooth, thick batter forms. Don’t overmix.
  • Pour the batter into the pan and spread into an even layer.
  • Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool for 20 minutes before using the parchment paper overhang to lift the cake out of the pan onto a wire cooling rack.
  • Mix together the sugar, cinnamon, nutmeg, and allspice, and set aside.
  • Brush the top and all sides of the warm cake with melted butter.
  • Sprinkle the cinnamon-sugar mixture all over the top and sides of the cake, letting it stick to the warm butter.
  • Let cool a bit longer, slice and serve!
