Apple Cinnamon Pomegranate Pecan Salad

I've been making this Pomegranate Salad for years and it's still one of my favorite holiday recipes! Made with sweet Honeycrisp apples, crumbly goat cheese, crunchy pecans, and tart pomegranate arils, it’s finished with a sweet, spiced maple cinnamon vinaigrette that's so flavorful. It's one of those recipes that looks and tastes impressive, but it's secretly so easy to make. I love adding this side salad to my Thanksgiving and Christmas menu, it's such a hit every time!

Ingredients

Salad

  • 2 medium ripe apples
  • 6-8 cups arugula
  • 1/2 cup chopped pecans
  • 4 ounces crumbled goat cheese
  • 1/4 cup pomegranate arils

Maple Cinnamon Vinaigrette

  • 1/4 cup olive oil
  • 2 Tablespoons white wine vinegar or champagne vinegar/ACV
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  • Slice or cube the apples, then combine in a large salad bowl with the arugula and pecans.
  • Top with the crumbled goat cheese and pomegranate arils. Lightly toss.
  • In a mason jar or salad dressing shaker, combine the vinaigrette ingredients and shake or whisk together.
  • If serving immediately, add it to the salad and toss. Otherwise, set it aside for self serving!
