Apple Harvest Chicken Salad

This Apple Harvest Chicken Salad is my fall-inspired twist on my classic chicken salad recipe! Tender chicken, crisp veggies, sweet Honeycrisp apple, Medjool dates, and crunchy pecans are tossed with a bright, creamy Greek yogurt dressing for a combination that's out-of-this-world delicious. My family loves all the tastes and textures, and I love that everything comes together in 15 minutes, making for an easy lunch or light dinner I can just toss together!

Ingredients

  • 1 1/2 cups cooked chicken cubed
  • 1 green onion finely chopped
  • 2 celery stalks finely chopped
  • 1 dill pickle spear or 2 small kosher dill gherkins chopped
  • 1 Honeycrisp apple chopped, about 1 cup
  • 5 pitted medjool dates diced
  • 1/3 cup chopped pecans
  • 1/2 cup plain Greek yogurt
  • 1 Tablespoon olive oil
  • 1 teaspoon lemon juice optional
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Place all of the ingredients in a large mixing bowl.
  • Mix well to combine everything.
  • That’s it! Serve on a croissant or apple slices and enjoy!
