Apple Streusel Pancakes

If you’re like me and crave something sweet in the morning, you’re going to love these Streusel Apple Pancakes! These pancakes are sweet, spiced, and have the best buttery, crumbly apple streusel on top. Plus they're made with cottage cheese for more protein! The maple cottage cheese drizzle on top really brings these together, and every bit tastes like a warm apple streusel cake. They're quick and easy enough for busy weekday mornings, but also comforting for weekend breakfast or brunch. My family and I love this easy, healthy fall pancake recipe!

Ingredients

Pancakes

  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 1/4 cups cottage cheese
  • 3 Tablespoon maple syrup plus more for serving
  • 2 Tablespoons milk of choice
  • 3 large eggs
  • 2 Tablespoons salted butter melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup apples finely diced

Streusel

  • 3 Tablespoons cold salted butter
  • 1/4 cup flour spooned and leveled
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  • Combine the flour, baking powder, and cinnamon in a large mixing bowl and set aside.
  • Blend the cottage cheese, maple syrup, and milk in a small blending cup until smooth.
  • Set aside 1/3 cup for the glaze later.
  • Add the egg, vanilla, and butter to the blender with the remaining cottage cheese mixture and blend until combined.
  • Pour the blended ingredients into the dry ingredients, then mix just until combined (make sure not to over mix the batter).
  • Gently fold in the diced apples, just until evenly distributed.
  • Meanwhile, add the streusel ingredients to a small bowl and use a fork to combine until coarse crumbles form. Do not over combine.
  • Heat a non-stick pan over medium low heat.
  • Place 1 teaspoon of the streusel in then pan, then add 1 medium scoop of the batter over the streusel and cook for 2-3 minutes with the lid on, until the edges begin to bubble.
  • Flip the pancake, then add 1 teaspoon of the streusel on top and cook for another 1-2 minutes (or until the pancake looks cooked through).
  • Let the pancakes cool, then top with the set aside icing. Enjoy!

Notes

  • Be careful not to overmix the batter, or the pancakes will be dense and tough. 
  • You'll know your pancakes are fully cooked when the tops begin to soften and steam begins to release from the top.
