Balsamic Peach Chicken Flatbread Recipe

I'll never get over how good these Balsamic Peach Chicken Flatbread! They're full of summer vibes and the perfect way to use up leftover ingredients. Crisp flatbreads are layered with fluffy whipped cottage cheese, caramelized peaches, herby pesto chicken, and melty cheese. They're drizzled with hot honey and a sweet balsamic glaze for that extra pop of flavor. This recipe makes enough for my whole family and is ready in about 30 minutes! I love how these are so great for summer days, they're effortless to make, and they use seasonal ingredients, like the basil I've been growing in my garden!

Ingredients

  • 3 medium peaches sliced
  • 1 Tablespoon olive oil
  • 1 1/2 cups full-fat cottage cheese
  • 2 Tablespoons lemon juice
  • 3 large naan or 4 pitas store-bought
  • 1 Tablespoons olive oil
  • 3 teaspoons minced garlic
  • 1/2 teaspoon lemon zest
  • 2 cups shredded cooked chicken
  • 1/4 cup pesto
  • 2 cups arugula
  • 1/4 cup Parmesan optional, shredded or grated
  • drizzle balsamic glaze about 1 Tablespoon, divided evenly
  • drizzle hot honey about 2 Tablespoons, divided evenly
  • 1/2 cup fresh basil leaves chopped
  • pinch flaky sea salt optional

Instructions

  • Preheat the oven to 400°F.
  • Place the peaches in a small glass casserole dish and drizzle with oil.
  • Roast for about 15 minutes, turning halfway through.
  • Meanwhile, blend the cottage cheese and lemon juice together in a small blender until smooth and creamy.
  • Place the flatbreads on a large baking sheet. Brush each one lightly with olive oil.
  • Divide the whipped cottage cheese over each of them, topping evenly with minced garlic and lemon zest.
  • Mix the chicken with the pesto and set aside.
  • Add the arugula, pesto chicken, and roasted peaches to the flatbreads.
  • Top each flatbread with a little bit of Parmesan.
  • Drizzle with hot honey and balsamic glaze, then bake for 9-10 minutes (or until fully warmed).
  • Top each flatbread with chopped basil and a pinch of flaky salt. Enjoy!
