Meet your new favorite summer breakfast with these Brown Sugar Peach Cinnamon Rolls! Soft, fluffy cinnamon roll dough is layered with a warm cinnamon-spiced peach filling, baked until golden, and finished with a sweet brown sugar glaze (or a simple vanilla glaze). Made with cottage cheese in the dough, these homemade cinnamon rolls are surprisingly high in protein without sacrificing any of the classic taste and texture you know and love. Even better, they're huge, super soft, and packed with juicy peaches in every bite. Whether you're serving them for a slow weekend breakfast, brunch with friends, or a special summer celebration, they're guaranteed to disappear fast. Honestly, they're one of my favorite breakfasts to make during peach season!

Instructions
Preheat the oven to 350°F. and grease an 8-inch x 8-inch square or round pan.
Melt the butter in a large skillet. Remove from the heat and mix in the brown sugar, maple syrup, and cinnamon. Pour into a bowl and refrigerate until ready to use.
In the same (now-empty) skillet add the peach filling ingredients. Cook on medium heat for 7-8 minutes, stirring often, until the peaches have softened. Turn off the heat and set aside.
Meanwhile, make the dough by blending the cottage cheese, vanilla, and maple syrup until smooth.
Set aside 2 Tablespoons of the blended cottage cheese mixture to make the glaze later. Place it in the fridge until you’re ready to use it!
Mix the flour, baking powder, and remaining blended cottage cheese mixture just until combined.
Use your hands to form the dough into a cohesive ball.
Roll out the dough into a 1/4" thick 9”x9" square on a lightly floured surface.
Spread half of the brown sugar mixture over the dough.
Spoon the peach filling in an even layer all over the top.
Using a sharp knife, slice into 6 even long strips.
From one end of a dough strip, slowly roll it up until into a cinnamon roll shape.
Add each cinnamon roll dough to the pan, leaving room in between so they can rise.
Spoon the remaining brown sugar mixture over the top of the cinnamon rolls and carefully spread with the back of a spoon.
Bake for 35-40 minutes, or until the edges start to turn golden (depending on size).
Let cool for 10 minutes.
Remove the set aside cottage cheese mixture from the fridge and whisk the glaze together. Spread it over the cinnamon rolls and enjoy!

1 Tablespoon butter (melted)
1 teaspoon vanilla extract
1 1/2 Tablespoons milk
Instructions:
Combine powdered sugar, melted butter, and vanilla in a large mixing bowl.
Add 1 Tablespoon milk and mix to combine; add additional milk 1/2 Tablespoon at a time till smooth.
