Chicken Caesar Smashed Tacos
These Chicken Caesar Smashed Tacos have been all over social media lately! The method for making these is different than traditional tacos: just mix the ground chicken with seasoning, smash it on a tortilla and cook. I love topping them off with chopped lettuce and the BEST quick caesar dressing for one of my favorite healthy, high-protein dinners! This smashed tacos recipe is easy, fun, and flavorful. Every bite is so good!

1 pound ground chicken or ground turkey 2 teaspoons minced garlic 1 teaspoon salt 1/2 teaspoon pepper 8 medium 50/50 mix tortillas corn/whole wheat 1/2 Tablespoon avocado oil for oiling pan 2 cups finely chopped romaine lettuce 1/3 cup feta cheese Caesar Dressing (or 1/4 cup store-bought)
Mix the ground chicken, garlic, salt and pepper in a large mixing bowl.
Scoop some (about 1/4 cup) of the mixture on to a tortilla and smash it with a fork, spreading evenly end to end on the tortilla.
Heat the oil in a pan over medium-high heat.
Place the tortilla chicken-side down and cook for 4-5 minutes.
Flip, then cook another 1-2 minutes.
Repeat with remaining tortillas, working 2-3 at a time if possible!
Meanwhile, whisk or shake the dressing ingredients together.
Top each cooked chicken tortilla with finely chopped romaine, a drizzle of the dressing, and feta cheese crumbles. Enjoy!
