Cottage Cheese Egg Bites

This Egg Bites recipe comes together in about 30 minutes and can be meal prepped ahead of time! Not only are they quick and easy to make, but they're high in protein and are so flavorful (no boring egg bites here). Ingredients

  • 8 large eggs
  • 1/2 cup low-fat cottage cheese drained
  • 1/2 teaspoon salt
  • 1/2 cup chopped spinach
  • 1/2 cup chopped red bell peppers
  • 2 Tablespoons salsa

Instructions

  • Preheat the oven to 350 degrees F.
  • Add the eggs, cottage cheese, and salt to the blender and blend until smooth.
  • Fold in the chopped spinach, bell peppers, and salsa.
  • Spray the silicone molds with avocado oil spray.
  • Pour the egg mixture into muffin pan.
  • Bake the egg bites for 30 minutes, or until firm and set. Allow to cool for 2 minutes and remove them from the mold.
  • Serve and enjoy!

Notes

  • To prevent the egg bites from getting soggy, be sure to drain the cottage cheese.
  • You can also use cheddar cheese instead!
  • Store in an airtight container. Refrigerate for up to 1 week, and freeze up to 3 months. 
  • Reheat in the microwave for 30-60 seconds from the fridge or 2.5 minutes from the freezer.
