Ingredients

  • 1 Tablespoon avocado oil
  • 1 pound lean ground beef
  • 1 medium green bell pepper finely diced
  • 1 cup beef broth or stock
  • 8 small corn or whole wheat tortillas
  • 2 cups shredded lettuce
  • 1/2 cup diced onion
  • 1/2 cup diced tomato
  • 1/2 cup shredded cheddar cheese
  • 1 medium lime cut into 4 wedges

Ground Beef Seasoning

  • 1 Tablespoon masa flour
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon sugar optional

Instructions

  • In a small bowl, combine the seasoning ingredients and whisk well. Set the seasoning mix aside.
  • Heat a large skillet over medium-high heat and add the oil.
  • Add the ground beef and green bell pepper to the skillet breaking it up as it cooks.
  • Once the ground beef is cooked and browned, sprinkle over the entire seasoning mixture and stir it into the ground beef and green pepper.
  • Add the beef broth to the meat and stir well again.
  • Reduce the heat to medium-low and allow the beef to simmer, stirring occasionally, until the liquid is absorbed.
  • Warm the tortillas in a dry, hot skillet for a few seconds on each side and then fill with ground beef, lettuce, tomato, onions, and a squeeze of lime.
  • Add additional toppings as you wish, serve, and enjoy!
