Easy Big Mac Casserole Recipe

This viral recipe has been all over the internet lately, so today I'm sharing my lighter, family-friendly twist with better-for-you ingredients. With a savory beef and potato base, a creamy cottage cheese sauce, and plenty of fresh toppings, it’s everything you love about burgers, but in a healthy casserole. It comes together quickly in a single casserole dish, can be prepped ahead, and makes enough to feed the whole family. My kids love building their own plates with the toppings and every bite is so good!

Ingredients

Potatoes

  • 2 1/2 Tablespoons avocado oil
  • 2 pounds russet potatoes, peeled and chopped into ½-inch cubes about 4 medium potatoes
  • 2 cups small diced yellow onion
  • 1 teaspoon fine sea salt
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Meat

  • 1 pound lean ground beef
  • 8 ounces baby bella mushrooms chopped very small
  • 4 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/4 cup low-sodium vegetable broth
  • 1/2 cup homemade or storebought hummus

Vegetables/Other

  • 1 1/2 cups shredded cheddar cheese or more! I like a lot of cheese
  • 1 cup colorful cherry tomatoes quartered
  • 1 1/2 cups shredded iceberg lettuce or gem lettuce
  • 1/2 cup dill pickle chips chopped or left whole
  • 1/2 small red onion finely chopped

Sauce

  • 3/4 cup cottage cheese
  • 4-5 dill pickle chips
  • 2 Tablespoons water
  • 1 Tablespoon ketchup
  • 1 Tablespoon yellow mustard
  • 1/2 teaspoon tamari

Instructions

  • Preheat the oven to 375°F. Grease a 9”x13” casserole dish with nonstick cooking spray.
  • To the pan, add the oil, potatoes, onion, salt, paprika, onion powder and garlic powder. Cover the pan with foil and bake for 25 minutes.
  • While the potatoes bake, in a large bowl, mix together (with your hands) the beef, mushrooms, garlic, salt, onion powder, paprika, broth and hummus.
  • Remove the pan from the oven and uncover it. Crumble the raw meat mixture over the potatoes and return to the oven, uncovered, for 15 minutes.
  • Top the cooked beef layer with shredded cheese and bake for another 15 minutes until bubbly and golden.
  • While the casserole bakes, blend all sauce ingredients in a high speed blender until smooth. Add an extra 1 tablespoon of water if you prefer a thinner sauce.
  • After baking, let cool for 5-10 minutes, then sprinkle the casserole with tomatoes, lettuce, pickles and red onion.
  • Drizzle with the sauce and serve.
