These Pecan Pie Bars are always my go-to dessert for holiday gatherings! I've been making this recipe for YEARS and it's always such a hit. Not only are these pie bars perfectly sweet with the best flaky crust, but you'd never guess that they're also gluten-free, dairy-free, and refined sugar-free! Made with ingredients you can feel good about, this cozy, nutty dessert is easy to share, and everyone will love it. All of the goodness of melt-in-your-mouth pecan pie, but in an easy pie bar form!
Add all of the crust ingredients to a medium mixing bowl and stir until its all well combined.
Press the crust mixture evenly into the bottom of the lined baking pan.
Add the filling ingredients to the mixing bowl and whisk well.
Pour the filling into the baking dish.
Bake for 40-45 minutes (or until it isn't jiggly).
Remove from the oven and let cool before cutting.
Remove the bars from the pan by lifting the parchment paper out and setting it on a flat surface.
Cut into 16 small bars, serve, and enjoy!

Notes
Transfer the cut bars to an airtight container with parchment between the layers, or wrap them tightly in plastic wrap and place them in a heavy-duty freezer bag.
Store them at room temperature for 24-48 hours, in the refrigerator for up to 5 days, or freeze them for up to 1 month.
Thaw the pecan bars in the fridge or on the counter before serving.
