Gluten-Free Christmas Sugar Cookies
These Gluten-Free Sugar Cookies are truly perfect for Christmas! They're soft, sweet, lightly crisp on the outside, and perfectly chewy on the inside. The dough comes together so easily, then the dough is rolled out and cut into shapes (or rolled into a log and sliced). Bake, add icing, and enjoy!

1/2 cup unsalted butter softened 3/4 cup granulated sugar 2 large eggs 1 teaspoon vanilla 2 1/4 cups gluten-free all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt Icing 1 cup powdered sugar sifted 2-3 Tablespoons milk 1/2 teaspoon vanilla natural food coloring optional holiday sprinkles optional
Preheat the oven to 350 degrees F.
Whisk the butter, sugar, eggs, and vanilla.
Add in the gluten-free flour, baking powder, and salt, mixing until just combined.
If you can, cover with plastic wrap (or an airtight lid) and refrigerate the dough for at least 30 minutes.
Lightly roll out the dough on a floured surface and cut out cookie shapes.
Place on baking sheets lined with parchment paper and bake for 12-14 minutes per batch, until the edges are lightly golden.
Mix the icing ingredients and dip each cookie, adding sprinkles or any toppings.
Let them set in the fridge for 15-25 minutes and enjoy!
