This Pear & Goat Cheese Salad with homemade Honey Tarragon Vinaigrette is wholesome, elegant, and comes together in just 15 minutes! Ingredients

Salad

  • 10-12 cups mixed salad greens
  • 2 medium ripe red or green pear or 4 small, sliced thinly
  • 4 ounces honey goat cheese or plain, crumbled
  • 1 small shallot sliced thinly
  • 1/2 cup chopped walnuts

Honey Tarragon Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 Tablespoons honey
  • 2 Tablespoons chopped fresh tarragon or 2 teaspoons dried tarragon
  • Pinch of salt and pepper

Instructions

  • Add the greens to 4 large salad bowls.
  • Top with the sliced pears, crumbled goat cheese, sliced shallot, and walnuts.
  • In a jar or small bowl, mix the vinaigrette ingredients with a whisk or by shaking vigorously.
  • Drizzle the dressing on top of both salads.
  • Serve and enjoy!
