Margarita Ice Cream

This Margarita Ice Cream is creamy, refreshing, and tastes just like my favorite summer drink! Made with 8 grams of protein and no refined sugar, it’s a better-for-you treat that’s perfect for summer. With its sweet flavor and thick, creamy consistency, you’d never guess this isn’t traditional ice cream! I make it with my Ninja Creami, but I’m also including an easy blender option in case you don’t have one.

Equipment

Ingredients

  • 4 teaspoons grated lime zest
  • 3/4 cup fresh lime juice
  • 1/2 cup orange juice
  • 1/2 cup agave or maple syrup
  • 1/8 teaspoon salt
  • 1 cup cottage cheese
  • 2/3 cup coconut cream

Instructions

  • Combine all of the ingredients in a blender and blend until smooth.
  • Pour into a pint container for the Ninja Creami, add a lid, and freeze overnight.
  • When ready, use the Ninja Creami “Sorbet” setting to mix the ice cream.
  • Serve, top with a drizzle of agave syrup and a sprinkle of flaky salt, and enjoy!

Notes

  • You can also add 4-5 Tablespoons of tequila if you want a boozy twist on this recipe! Just know that this will result in a softer sherbet texture.
