I go to bed dreaming about eating these Peanut Butter Chocolate Chip Pancakes in the morning! They’re some of the thickest, fluffiest pancakes ever, and the batter is full of peanut butter chocolate chips goodness. Plus they're made with cottage cheese, so they're high in protein while still tasting like dessert! I love adding my homemade peanut butter syrup on top, and my kids have become just as obsessed with these as I am. Blend the cottage cheese, eggs, maple syrup, vanilla, and milk until smooth.
Pour the cottage cheese mixture into the flour mixture, then lightly mix just to fold it in.
Fold in the melted coconut oil and peanut butter, mixing just until well-combined (don’t overmix!).
Fold in the chocolate chips. The batter will be very thick!
Heat a non-stick pan over medium heat.
When the pan is hot, scoop about 1/4 cup of the batter into the pan. Lightly spray a spatula with oil and press the batter down, shaping it into a pancake form.
Cook for about 2 minutes, then carefully flip it over.
Press it down lightly, then cook for another 2 minutes.
Repeat with the rest of the batter and let the pancakes cool on a cooling rack while you make them.
Whisk together the peanut butter syrup, drizzle over a stack of pancakes, and top with extra chocolate chips. Enjoy!
