Pumpkin Cinnamon Roll Pancakes

These Pumpkin Cinnamon Roll Pancakes are everything I want in a fall breakfast! They’re soft, sweet, perfectly spiced, and swirled with a buttery cinnamon-sugar filling that makes every bite taste like a cinnamon roll… but better! Using cottage cheese in both the batter and icing gives this recipe a little extra protein and helps make the pancakes super fluffy. Every bite is truly dreamy, and no one ever notices the cottage cheese!

Ingredients

Pancake Base

  • 2 Tablespoons salted butter melted and cooled
  • 1 cup cottage cheese
  • 1/4 cup maple syrup
  • 1/2 cup pumpkin purée
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice

Cinnamon Sugar Filling

  • 2 Tablespoons butter melted
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Melt the butter and set aside to cool.
  • Blend the cottage cheese and maple syrup together in a large blending cup (this works better than a big blender).
  • Remove 1/3 cup and set aside for the icing.
  • Add in the pumpkin puree, eggs, vanilla, and butter. Lightly pulse until combined.
  • Whisk the flour, baking powder, cinnamon, and pumpkin spice together in a large mixing bowl.
  • Add in the blended liquid ingredients and mix just until combined. Don’t over mix it, lumps in the batter are okay!
  • Meanwhile, make the cinnamon sugar filling by melting the butter, then adding the brown sugar and cinnamon. Stir until combined.
  • Heat a nonstick pan over medium heat, then pour about 1/4 cup of the pancake batter into the pan for each pancake.
  • Swirl the cinnamon filling gently over each pancake, then add the lid and cook for 3-4 minutes.
  • Remove the lid and carefully flip each pancake, cooking for another 2 minutes.
  • Once the pancakes are done, drizzle with the cottage cheese icing and enjoy!

Notes

Prevent Burning: If there is leftover brown sugar butter mixture on your pan, scrape it off to the side before adding more batter to the pan!
