Matcha Chia Seed Energy Bites

  • 6 pitted dates
  • 1/2 cup cashew butter
  • 1/4 cup chia seeds
  • 1 tsp coconut oil
  • 2 Tbsp matcha powder
  • 1/4 cup finely shredded coconut


  • Blend the dates until they form a paste.
  • Add the cashew butter, chia seeds, coconut oil, and 1 Tbsp of matcha powder. Continue to blend until even.
  • Create each bite by rolling the "batter" by hand. If the batter is too soft to roll, refrigerate for 1 hour before creating bites.
  • Roll each Matcha Chia Seed Energy Bite in the matcha powder and shredded coconut. Serve and enjoy!
